Cooking up some Caribbean


Thanks to the recent PS3 update and the new iPlayer option I realised I’d been missing Levi Roots Caribbean Cooking Made Easy on BBC2. I love Caribbean food, especially my BBQ favourite – Jerk Chicken. In fact on a BBQ day I coat everything on Jerk seasoning, the hotter the better. Having watched the first 3 shows I picked up his book accompanying the series to find out that he was doing a signing later that week. So having gone back with James (pictured) I then had 4 signed books, two for friends and family, one permanently in the kitchen with my favourite signed “Spice it Up!” on my bookshelf.

I’m lucky that our local Tesco not only sells fresh plantain, mango, papaya, scotch bonnet chillis, etc but also has a speciality aisle with All Spice berries, Ackee, Callaloo, Tamarind and all the other less common ingredients. So far I’ve done Martinique Coconut Chicken Curry, a sea bass dish and Pepperpot (hot, hot, hot!).

I’m not sure whats next but I have a Plantain and a very large Pineapple sat looking at me.
