I was looking for a some XP remote desktop style privacy when screen sharing and found this excellent tip. Just open terminal (close screen sharing if you have a session open) and type:

defaults write com.apple.ScreenSharing \
'NSToolbar Configuration ControlToolbar' -dict-add 'TB Item Identifiers' \
'(Scale,Control,Share,Curtain,Capture,FullScreen,GetClipboard,SendClipboard,Quality)'

(or just cut and paste it in)

Screen Sharing Toolbar

This will give you a few extra buttons in your menu bar notably the one that looks like curtains. This will allow you to type in a message that will be displayed on the remote screen together with a padlock image. More information on the other buttons can be found in the original article.
